Sparkling & Pet Nat Wines
A 'pet nat' (or Pétillant Naturel) is a sparkling wine made using the very old 'ancestral' method. It differs from conventional sparkling wine methods in that all the fizz comes from the sugars found naturally in the grapes with no added sugars or yeasts. Before the still wine is fully fermented, the wine is bottled and so the bubbles are created in the last stages of fermentation. To stop the bottles exploding when opened for drinking, the bottles are 'discorged' to release the excess fizz, refilled, and re-capped, ready for the market. They tend to have a slightly lighter, more spritzer like fizz and are great fun to drink.
